So I was supposed to start the elimination diet this last week and guess what didn’t happen? Yeah that. It required grocery shopping and I really hate doing that.
BUT I did go today and made some nummy almond butter to start off the week right. I’m making some steel cut oats and wanted some to put on top. I’m not sure about this steel cut oat thing but maybe the almond butter will help. Almond butter will help anything taste better, right? HERE is the recipe I used.
I also made a big batch of veggie broth. I always make my own chicken broth and many of the upcoming recipes call for vegetable broth. I thought it would be super easy and it was. I didn’t add garlic this time because I am making lentil soup with it and the soup calls for 5 garlic cloves. I also added salt which is totally optional. I usually don’t salt my chicken broth. To make chicken broth just add garlic and a chicken, skin and all. If I buy a rotisserie chicken I throw whatever is left of the chicken in. Cook it down till the chicken is falling apart.

- 2 onions, peeled and halved
- 6 carrots, peeled and cut into big pieces
- 4 celery stalks
- 5 garlic cloves
- bunch of parsley
- 3-4 stems fresh thyme
- 10 pepper corns
- 16 cups water
- Roast veggies at 425 for 10-15 minutes. Add all ingredients to soup pot. Bring to a boil and let simmer for about 2 hours. Strain through cheesecloth or a coffee filter. Freezes well.
